Chef Carlos Mendez brings 1846 a rare combination of luxury hotel discipline and high-volume fire. Forged in the kitchens of the historic Adolphus Hotel in downtown Dallas, Carlos spent years executing service for one of Texas's most storied dining rooms - leading stations, coaching cooks, and holding the line on quality through every cover, every night.

At 1846, he is hands-on from prep to pass. Every sauce is tasted, every plate is checked, every cook is mentored. His approach is simple: respect the product, respect the guest, and never let a plate leave the kitchen unless it is right.
